Corn chowder: Creamy, easy to make and delicious!
Corn Chowder, a creamy and delicious way to enjoy Summer's heat and energy that went into producing this succulent vegetable. I got a few big, fat ears the other day and did not have a recipe in mind. I really miss soups during the summer months, a classic chowder just felt right. - 3 big ears on corn, husk removed and corn sliced off cob
- 1 small onion, finely diced
- 3 stalks of celery, finely diced
- 3 T olive oil or butter
- 2T flour
- 1t sea salt
- Pepper to taste
- 1 t garic powder
- 1 t Mrs. Dash
- 1 quart veggie or chicken stock(whatever your preference, I used veggie)
- 1 1/2 c lowfat milk, or unsweetened soy milk
Procedure:In a good sized pot, saute onion for a bit in the butter or oil. Add in the celery and saute for a bit more. In goes the corn and mix well. Continue to saute for 3 minutes. Add in the flour and mix well to coat veggies. Cook for a few minutes. Add in the stock and milk, spices and salt. Gently simmer for 5 to 7 minutes. Feel free to add in a tablespoon of corn starch or arrowroot powder mixed in some milk to thicken the soup. This soup goes really well with a beautiful salad, and some crusty bread.
