The Mexican film "Like Water for Chocolate," illustrates this perfectly. I have noticed that when I am rushed or aggravated (who me? never!) my food turns out poorly.

Always remember that no matter what you are doing, (taking out the trash for example) you can have a good attitude and the work passes quickly. The same for cooking, you may not love it; but knowing that your love goes into the food is reason enough to feel happy. Okay, I am totally obsessed with a shake that I have been making lately. Please don't be turned off by the ingredients, just give it a try.

    Green Machine

    10 oz coconut milk

  • 6 c baby spinach
  • 3 T Hemp or other Protein powder
  • 1 banana
  • 2 T peanut butter
  • 1 c ice
    • Pulse in the blender until smooth, enjoy.




      How to make homemade Paneer (cheese).

      Bring one gallon of whole milk to a mild boil while stirring constantly so it doesn't stick and burn. Add in the juice of 1 lemon. Stir and check if the curds gather, if the milk still seems very cloudy, add in more lemon juice. The whey should be clear and yellowish.

      Drain the curds in a cheesecloth and allow them to rest. Gather the cheesecloth to bring the curds together so they stick. Don't press very hard but put some pressure on it to take some of the water out.




      Butter Paneer Masala

      Paneer – cubed and sauté in a tbsp of ghee till golden brown, remove into a dish and add a cup of hot water to the fried paneer cubes and let them sit in it for 5 min,then drain the water and set aside.

      • 2 big onions (blanch for 10 mts and puree)
      • 1 tbsp ginger-garlic paste
      • 1 tsp red chilli pwd (I used kashmiri chillis)
      • 3 big ripe tomatoes (blanch ,de-skin and puree)
      • 3 tbsps cashewnut paste
      • ½ tsp coriander pwd
      • pinch of haldi (turmeric pwd)
      • 1/2 tsp dry fenugreek leaves
      • garam masala pwd (make a pwd of 3 cloves,1 green cardamom and 1” cinnamon)
      • salt to taste
      • 3 tbsps butter
      • 2 tbsps fresh cream

      Heat 2 tbsp of butter in a pan, add the onion paste and sauté till brown. Add ginger-garlic paste. Saute for 3 minutes. Add chilli pwd and combine,followed by the cashew paste and combine.

      Add tomato puree, crushed kasuri methi,coriander pwd,haldi,garam masala and salt. Stir and let it simmer for 4-5 mts.

      Add the paneer and simmer for 4-5 minutes. Add a small cup of water and let it cook on medium heat for 10 mts or till you get the desired curry consistency .Remove from fire, stir in remaining butter and fresh cream.

      Let the curry sit for 10-15 mts before serving.Garnish with coriander leaves. Serve hot with rotis, naan , paranthas or simple steamed white rice.

      Beet greens with bok choi and onion

      I had a glorious bunch of organic golden beets and the leafy parts were superb. I have sauteed them before but found them a little bitter and the kids complained (not nearly as bad as when I made broccoli rabe). I found that combining them with bok choi and onion and sauteing them with olive oil really took the bite out of them.

      1 large onion sauteed in a few tbs of olive oil, then coarsely chop the greens and toss them in. A quick grind of pepper and some salt and you have a quick and healthy side dish.
