Veggie Burrito

Veggie Burritos are a healthy and nutritious alternative to something you can pick up in the freezer section. All organic is the best choice, so I don't repeat it in the ingredients section.

  • 1 can of black beans, drained but not rinsed
  • 3 cups potatoes, washed, diced (leave skin on) and steamed
  • 3 fresh tomatoes diced or (1) 15 oz can of diced tomatoes
  • 1 green pepper, diced
  • 1 large onion, diced
  • 1 cup frozen corn
  • 3 T taco seasoning
  • 2 cloves garlic, minced

Dump the potatoes in the large pan with some oil and gently fry for a few minutes. Toss in everything else, add in the taco seasoning mixed in 1/3 c water and gently stir to mix. Let simmer on low until everything is hot. Heat up whole grain burrito wraps and glop a bunch on, sprinkle on your favorite cheese and wrap it up. These went fast and left overs were even better the next day.

Great with a side salad and a glass of iced tea.
